A simple and healthy cabbage soup perfect for weight watchers. This soup is low in calories and packed with nutrients.

Ingredients

  • 1 head of cabbage, chopped
  • 2 carrots, sliced
  • 1 onion, diced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 cups water
  • 1 can diced tomatoes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Chop all vegetables.
  2. In a large pot, sauté onion, carrots, and celery for 5 minutes.
  3. Add cabbage and cook for another 5 minutes.
  4. Pour in vegetable broth and water.
  5. Add diced tomatoes and seasonings.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Adjust seasoning if needed and serve hot.
