1 lb lean ground turkey
1 tbsp olive oil
1 onion, diced
2 carrots, chopped
2 celery stalks, chopped
3 garlic cloves, minced
1 can (14.5 oz) diced tomatoes
6 cups low-sodium chicken broth
1 tsp dried thyme
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
2 cups chopped kale
Instructions
Heat olive oil in a large pot over medium heat.
Add ground turkey and cook until browned, about 5 minutes.
Add onion, carrots, celery, and garlic. Cook for 5 minutes.
Stir in diced tomatoes, chicken broth, thyme, oregano, salt, and pepper.
