  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups chopped kale

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground turkey and cook until browned, about 5 minutes.
  3. Add onion, carrots, celery, and garlic. Cook for 5 minutes.
  4. Stir in diced tomatoes, chicken broth, thyme, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add kale and cook for another 5 minutes.
  7. Serve warm.
