A hearty and nutritious vegan stew made with lentils and mushrooms.

Ingredients

  • 1 cup dried lentils
  • 2 cups vegetable broth
  • 1 cup chopped mushrooms
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Cook for 5 minutes.
  3. Stir in mushrooms and cook for another 3 minutes.
  4. Add lentils, vegetable broth, cumin, and paprika. Bring to a boil.
  5. Reduce heat, cover, and simmer for 25 minutes or until lentils are tender.
  6. Season with salt and pepper before serving.

Notes

  • Soak lentils for 30 minutes before cooking for faster preparation.
  • Add spinach or kale for extra greens.
  • Store leftovers in an airtight container for up to 3 days.
