1 tablespoon olive oil
1 pound ground turkey
1 large onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
1 (15 ounce) can cannellini beans, rinsed and drained
1 (15 ounce) can great northern beans, rinsed and drained
Heat olive oil in a large pot or Dutch oven over medium heat. Add ground turkey and cook, breaking it up with a spoon, until no longer pink. Drain any excess fat.
Add chopped onion and minced garlic to the pot. Cook until the onion is softened, about 5-7 minutes.
Stir in diced tomatoes, cannellini beans, great northern beans, green chiles, and chicken broth.
Add chili powder, ground cumin, and dried oregano. Stir to combine.
Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes to allow the flavors to meld.
Season with salt and black pepper to taste.
Serve hot with your favorite toppings.
Notes
For a spicier chili, add a pinch of cayenne pepper or a dash of hot sauce.
This chili freezes well. Store in an airtight container for up to 3 months.
Adjust the consistency by adding more chicken broth if you prefer a thinner chili.
