This Turkey Spinach Lasagna is a delicious and healthy twist on a classic comfort food. Layers of lean ground turkey, nutritious spinach, and creamy cheese are baked to perfection.
Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
Add onion and garlic to the skillet and cook until softened, about 5 minutes.
Stir in crushed tomatoes, tomato sauce, basil, oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer, then reduce heat and let it cook for 15 minutes, stirring occasionally.
In a medium bowl, combine thawed and squeezed dry spinach, ricotta cheese, egg, 1/2 cup Parmesan cheese, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well.
Preheat oven to 375°F (190°C).
Spread about 1 cup of the meat sauce in the bottom of a 9×13 inch baking dish.
Arrange 3-4 lasagna noodles over the sauce.
Spread half of the spinach and ricotta mixture over the noodles.
