This Turkey Spinach Lasagna is a delicious and healthy twist on a classic comfort food. Layers of lean ground turkey, nutritious spinach, and creamy cheese are baked to perfection.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 15 ounces ricotta cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 lasagna noodles, cooked al dente
  • 2 cups shredded mozzarella cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
  2. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  3. Stir in crushed tomatoes, tomato sauce, basil, oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer, then reduce heat and let it cook for 15 minutes, stirring occasionally.
  4. In a medium bowl, combine thawed and squeezed dry spinach, ricotta cheese, egg, 1/2 cup Parmesan cheese, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well.
  5. Preheat oven to 375°F (190°C).
  6. Spread about 1 cup of the meat sauce in the bottom of a 9×13 inch baking dish.
  7. Arrange 3-4 lasagna noodles over the sauce.
  8. Spread half of the spinach and ricotta mixture over the noodles.
  9. Top with about 1 cup of meat sauce.
  10. Sprinkle with 1 cup of mozzarella cheese.
  11. Repeat layers: noodles, remaining spinach mixture, meat sauce, and mozzarella cheese.
  12. Finish with a final layer of noodles, remaining meat sauce, and the remaining mozzarella cheese.
  13. Cover the baking dish with aluminum foil.
  14. Bake for 25 minutes.
  15. Remove foil and bake for an additional 20-25 minutes, or until the cheese is bubbly and golden brown.
  16. Let the lasagna rest for 10 minutes before serving.

Notes

  • You can substitute ground beef or lamb for ground turkey if desired.
  • For extra flavor, add a pinch of red pepper flakes to the meat sauce.
  • Prepare the lasagna ahead of time and refrigerate. Bake when ready to serve, adding an extra 10-15 minutes to the covered baking time.
