A comforting and savory shepherd’s pie featuring ground turkey, mixed vegetables, and a creamy mashed potato topping. This dish is a lighter alternative to traditional shepherd’s pie, perfect for a hearty family meal.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 cup chicken broth
  • 1 tablespoon tomato paste
  • 2 tablespoons all-purpose flour
  • Salt and black pepper to taste
  • 3 pounds potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add chopped onion, carrots, and celery to the skillet. Cook for 5-7 minutes, or until vegetables are softened.
  4. Stir in peas, corn, thyme, and rosemary. Cook for 2 minutes.
  5. In a small bowl, whisk together chicken broth and tomato paste. Pour into the skillet.
  6. Sprinkle flour over the turkey and vegetables, stirring constantly for 1 minute.
  7. Bring to a simmer and cook for 5 minutes, or until the sauce thickens. Season with salt and pepper.
  8. While the turkey mixture is cooking, boil potatoes in a large pot of salted water until very tender, about 15-20 minutes.
  9. Drain potatoes and return them to the pot. Add milk and butter. Mash until smooth. Season with salt and pepper.
  10. Spoon the turkey mixture into a 9×13 inch baking dish.
  11. Spread the mashed potatoes evenly over the turkey mixture. If desired, sprinkle with shredded cheddar cheese.
  12. Bake for 25-30 minutes, or until the topping is lightly golden and the filling is bubbly.
  13. Let stand for 5 minutes before serving.

Notes

  • For a richer flavor, use beef broth instead of chicken broth.
  • You can add other vegetables like mushrooms or bell peppers to the filling.
  • To make it gluten-free, use gluten-free flour or cornstarch to thicken the sauce.
  • Prepare the filling and mashed potatoes ahead of time and assemble just before baking.
