This casserole is a hearty and flavorful dish, perfect for a comforting meal. It combines tender turkey with fluffy rice, vegetables, and a creamy sauce, all baked to golden perfection.

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1 carrot, peeled and diced
  • 1 pound cooked turkey, shredded or diced
  • 2 cups cooked white rice
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion, celery, and carrot. Cook until softened, about 5-7 minutes.
  3. In a large bowl, combine the cooked turkey, cooked rice, cream of mushroom soup, milk, salt, and pepper. Add the cooked vegetables and mix well.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Sprinkle the shredded cheddar cheese over the top of the casserole.
  6. Bake for 25-30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  7. Let stand for 5 minutes before serving.

Notes

  • You can use leftover roasted turkey or ground turkey cooked with seasonings.
  • Feel free to add other vegetables like peas, corn, or green beans.
  • For a richer flavor, you can use chicken broth instead of milk.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
