1 medium onion, chopped
2 stalks celery, chopped
1 carrot, peeled and diced
1 pound cooked turkey, shredded or diced
2 cups cooked white rice
1 can (10.5 ounces) cream of mushroom soup
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheddar cheese
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
Heat the olive oil in a large skillet over medium heat. Add the onion, celery, and carrot. Cook until softened, about 5-7 minutes.
In a large bowl, combine the cooked turkey, cooked rice, cream of mushroom soup, milk, salt, and pepper. Add the cooked vegetables and mix well.
Pour the mixture into the prepared baking dish and spread evenly.
Sprinkle the shredded cheddar cheese over the top of the casserole.
Bake for 25-30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.

You can use leftover roasted turkey or ground turkey cooked with seasonings.
