These turkey porcupine meatballs are a fun and flavorful twist on a classic dish, featuring lean ground turkey and rice simmered in a savory tomato sauce. They are a comforting and satisfying meal perfect for any weeknight.

Ingredients

Scale
  • 1 pound ground turkey
  • ½ cup uncooked long-grain white rice
  • ¼ cup finely chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 (14.5 ounce) can crushed tomatoes
  • 1 cup water
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar

Instructions

  1. In a large bowl, combine the ground turkey, uncooked rice, chopped onion, minced garlic, salt, and pepper. Mix until just combined, being careful not to overmix.
  2. Form the mixture into 1-inch meatballs.
  3. In a large skillet or Dutch oven, combine the crushed tomatoes, water, brown sugar, and apple cider vinegar. Bring the sauce to a simmer over medium heat.
  4. Carefully place the meatballs into the simmering sauce. Reduce the heat to low, cover, and cook for 30-35 minutes, or until the rice is tender and the meatballs are cooked through.
  5. Serve hot with your favorite side dishes.

Notes

  • For a richer flavor, you can brown the meatballs in a separate pan before adding them to the sauce.
  • If the sauce becomes too thick, add a little extra water or broth.
  • These meatballs can be frozen cooked or uncooked. Thaw before cooking or reheating.
