2 cups cooked turkey, shredded or diced
8 ounces egg noodles
1 can (10.5 ounces) cream of mushroom soup
1/2 cup milk
1/4 cup chopped onion
1/4 cup chopped celery
1/2 cup frozen peas
1/2 cup shredded cheddar cheese
1/4 cup breadcrumbs
2 tablespoons butter, melted
Salt and black pepper to taste
Instructions
Preheat oven to 375°F (190°C).
Cook egg noodles according to package directions. Drain and set aside.
In a large bowl, combine cooked turkey, cooked noodles, cream of mushroom soup, milk, onion, celery, and peas. Mix well.
Pour the mixture into a 9×13 inch baking dish.
In a small bowl, combine shredded cheddar cheese, breadcrumbs, and melted butter. Sprinkle evenly over the casserole.
Bake for 25-30 minutes, or until bubbly and the topping is golden brown.
Let stand for 5 minutes before serving.
Notes
You can use leftover roasted turkey or cooked chicken for this recipe.
Feel free to add other vegetables like carrots or corn.
For extra flavor, add a pinch of dried thyme or poultry seasoning to the mixture.
