These turkey lettuce wraps are a quick and healthy meal, perfect for a light lunch or dinner. They feature savory ground turkey, crisp vegetables, and a flavorful sauce, all wrapped in fresh lettuce leaves.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 cup shredded carrots
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 head butter lettuce or romaine lettuce, leaves separated
  • 1/4 cup chopped fresh cilantro, for garnish
  • 2 tablespoons chopped peanuts, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  2. Add onion, garlic, red bell pepper, and shredded carrots to the skillet. Cook, stirring occasionally, until vegetables are tender-crisp, about 5 minutes.
  3. In a small bowl, whisk together soy sauce, rice vinegar, honey, ginger, and red pepper flakes (if using). Pour the sauce over the turkey and vegetable mixture. Stir well to coat and cook for 2-3 minutes, allowing the sauce to thicken slightly.
  4. Remove from heat.
  5. To serve, spoon the turkey mixture into individual lettuce leaves. Garnish with fresh cilantro and chopped peanuts, if desired.

Notes

  • You can substitute ground chicken or lean ground beef for turkey.
  • For extra spice, add more red pepper flakes.
  • Serve with a side of brown rice or quinoa for a heartier meal.
  • Prepare the turkey mixture ahead of time and store in the refrigerator for up to 3 days. Assemble wraps just before serving.
