Homemade turkey breakfast sausage patties are a flavorful and leaner alternative to traditional pork sausage. Made with ground turkey and a blend of savory spices, they are perfect for a healthy breakfast.

  • 1 lb ground turkey
  • 1 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper
  • 1/8 tsp cayenne pepper (optional, for a little kick)
  • 1/2 tsp salt
  • 1 tbsp olive oil (for cooking)

Instructions

  1. In a medium bowl, combine the ground turkey, sage, thyme, garlic powder, onion powder, black pepper, cayenne pepper (if using), and salt.
  2. Mix gently with your hands until the spices are evenly distributed throughout the turkey. Be careful not to overmix, as this can make the patties tough.
  3. Form the turkey mixture into 8-10 small patties, about 1/2 inch thick.
  4. Heat the olive oil in a large non-stick skillet over medium heat.
  5. Place the patties in the hot skillet and cook for 4-5 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
  6. Serve hot and enjoy!

Notes

  • You can make these patties ahead of time and store them in the refrigerator for up to 3 days.
  • Cooked patties can be frozen for up to 3 months. Thaw in the refrigerator overnight before reheating.
  • Adjust the spices to your preference. For a sweeter sausage, add a pinch of brown sugar or maple syrup.
  • For a spicier sausage, increase the amount of cayenne pepper.
