- 1 tablespoon olive oil
- 1 pound cooked turkey, shredded or diced
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 6 cups chicken broth
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup butter, melted
- Heat olive oil in a large pot or Dutch oven over medium heat. Add carrots, celery, and onion. Cook until softened, about 5-7 minutes.
- Stir in chicken broth, dried thyme, and black pepper. Bring to a simmer.
- Add the cooked turkey to the pot. Reduce heat to low and continue to simmer while preparing the dumplings.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate small bowl, whisk together milk and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Drop spoonfuls of the dumpling batter into the simmering turkey mixture.
- Cover the pot and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy. Do not lift the lid during cooking.
- Serve hot.
