- 1 lb chicken or vegetable potstickers
- 1 can (13.5 oz) coconut milk
- 4 cups chicken or vegetable broth
- 1 tbsp grated ginger
- 2 cloves garlic, minced
- 1 tbsp fish sauce or soy sauce
- 1 tbsp lime juice
- 1 tsp brown sugar or honey
- 1 cup sliced mushrooms
- 1 red bell pepper, thinly sliced
- 2 green onions, chopped
- 1 tbsp chopped cilantro
- 1 tbsp vegetable oil
- Heat oil in a large pot over medium heat. Add ginger and garlic, sauté for 1 minute.
- Add mushrooms and bell pepper, cook for 3 minutes.
- Pour in broth and coconut milk, stir well.
- Add potstickers, fish sauce, lime juice, and sugar. Simmer for 8-10 minutes.
- Garnish with green onions and cilantro before serving.
