  • 1 lb chicken or vegetable potstickers
  • 1 can (13.5 oz) coconut milk
  • 4 cups chicken or vegetable broth
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 tbsp fish sauce or soy sauce
  • 1 tbsp lime juice
  • 1 tsp brown sugar or honey
  • 1 cup sliced mushrooms
  • 1 red bell pepper, thinly sliced
  • 2 green onions, chopped
  • 1 tbsp chopped cilantro
  • 1 tbsp vegetable oil

Instructions

  1. Heat oil in a large pot over medium heat. Add ginger and garlic, sauté for 1 minute.
  2. Add mushrooms and bell pepper, cook for 3 minutes.
  3. Pour in broth and coconut milk, stir well.
  4. Add potstickers, fish sauce, lime juice, and sugar. Simmer for 8-10 minutes.
  5. Garnish with green onions and cilantro before serving.

  • Use frozen potstickers for convenience.
  • Adjust spice by adding chili flakes or sriracha.
