A delicious and easy-to-make keto-friendly taco soup with a cheesy queso twist.

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 packet taco seasoning
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: avocado, sour cream, cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned.
  3. Add onion, garlic, and bell pepper. Cook until softened.
  4. Stir in diced tomatoes, chicken broth, and taco seasoning. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add heavy cream and shredded cheese. Stir until cheese melts.
  7. Season with salt and pepper.
  8. Serve hot with optional toppings.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For a spicier version, add jalapeños or hot sauce.
