- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (10 oz) diced tomatoes with green chilies
- 4 cups chicken broth
- 1 packet taco seasoning
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Optional toppings: avocado, sour cream, cilantro
- Heat olive oil in a large pot over medium heat.
- Add ground beef and cook until browned.
- Add onion, garlic, and bell pepper. Cook until softened.
- Stir in diced tomatoes, chicken broth, and taco seasoning. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add heavy cream and shredded cheese. Stir until cheese melts.
- Season with salt and pepper.
- Serve hot with optional toppings.
