Tandoori Chicken Skewers are a popular appetizer or main course, featuring tender chicken pieces marinated in yogurt and spices, then grilled to perfection. This recipe uses a flavorful marinade to infuse the chicken with aromatic Indian spices, resulting in a juicy and savory dish.

  • 1.5 pounds boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Wooden or metal skewers

Instructions

  1. In a large bowl, combine the yogurt, lemon juice, ginger-garlic paste, ground cumin, ground coriander, turmeric powder, paprika, red chili powder, garam masala, and salt. Mix well to create the marinade.
  2. Add the chicken pieces to the marinade and toss to coat thoroughly. Ensure all chicken pieces are well covered.
  3. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  4. If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
  5. Preheat your grill to medium-high heat.
  6. Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece.
  7. Brush the grill grates with a little vegetable oil to prevent sticking.
  8. Place the skewers on the preheated grill and cook for 8-12 minutes, turning occasionally, until the chicken is cooked through and has a slight char. The internal temperature of the chicken should reach 165°F (74°C).
  9. Remove the chicken skewers from the grill and let them rest for a few minutes before serving.

Notes

  • Serve hot with a side of mint chutney, raita, or a fresh salad.
  • You can also cook these skewers in an oven at 400°F (200°C) for 20-25 minutes, or until cooked through.
  • For a smoky flavor, you can add a drop of liquid smoke to the marinade.
  • Adjust the amount of red chili powder to your preferred spice level.
