This Taco Lasagna recipe is a delicious and easy-to-make dish that combines the flavors of tacos with the comfort of lasagna. It’s perfect for a family dinner or a potluck.

  • 1 pound ground beef
  • 1 (1.25 ounce) packet taco seasoning
  • 1 (15 ounce) can refried beans
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 12 corn tortillas
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain off any excess grease.
  3. Stir in taco seasoning and cook for 1 minute more.
  4. In a separate bowl, combine refried beans and diced tomatoes with green chilies.
  5. Spread a thin layer of the bean mixture in the bottom of a 9×13 inch baking dish.
  6. Arrange 6 corn tortillas over the bean mixture, overlapping slightly.
  7. Spread half of the seasoned ground beef over the tortillas.
  8. Sprinkle with 1 cup of shredded Mexican cheese blend.
  9. Repeat layers: bean mixture, remaining 6 tortillas, remaining ground beef, and remaining 1 cup of cheese.
  10. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  11. Let stand for 5 minutes before serving.
  12. Garnish with sour cream and fresh cilantro, if desired.

Notes

  • You can add other taco toppings like sliced black olives, diced onions, or jalapeños.
  • For a spicier version, use hot taco seasoning or add a pinch of cayenne pepper.
  • This dish can be made ahead of time and reheated.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
