1 pound ground beef
1 (1.25 ounce) packet taco seasoning
1 (15 ounce) can refried beans
1 (10 ounce) can diced tomatoes with green chilies, undrained
12 corn tortillas
2 cups shredded Mexican cheese blend
1/2 cup sour cream
1/4 cup chopped fresh cilantro (optional)
2 tablespoons vegetable oil
Instructions
Preheat oven to 375 degrees F (190 degrees C).
Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain off any excess grease.
Stir in taco seasoning and cook for 1 minute more.
In a separate bowl, combine refried beans and diced tomatoes with green chilies.
Spread a thin layer of the bean mixture in the bottom of a 9×13 inch baking dish.
Arrange 6 corn tortillas over the bean mixture, overlapping slightly.
Spread half of the seasoned ground beef over the tortillas.
Sprinkle with 1 cup of shredded Mexican cheese blend.
Repeat layers: bean mixture, remaining 6 tortillas, remaining ground beef, and remaining 1 cup of cheese.
Bake for 20-25 minutes, or until cheese is melted and bubbly.
Let stand for 5 minutes before serving.
Garnish with sour cream and fresh cilantro, if desired.
Notes
You can add other taco toppings like sliced black olives, diced onions, or jalapeños.
For a spicier version, use hot taco seasoning or add a pinch of cayenne pepper.
