These sweet potato tacos are a flavorful and healthy meal, perfect for a weeknight dinner or a casual gathering. The sweetness of the potatoes pairs wonderfully with the smoky spices and fresh toppings.

  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • Salt and black pepper to taste
  • 12 small corn tortillas
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • Lime wedges for serving
  • Optional: Your favorite salsa or hot sauce

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the diced sweet potatoes with olive oil, smoked paprika, cumin, chili powder, salt, and pepper until evenly coated.
  3. Spread the seasoned sweet potatoes in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
  5. While the sweet potatoes are roasting, warm the corn tortillas according to package directions (you can warm them in a dry skillet, microwave, or oven).
  6. Assemble the tacos: Fill each warm tortilla with roasted sweet potatoes, black beans, red onion, cilantro, and avocado.
  7. Serve immediately with lime wedges and your favorite salsa or hot sauce, if desired.

Notes

  • For extra flavor, you can add a pinch of cayenne pepper to the sweet potatoes for a little heat.
  • These tacos are also delicious with a drizzle of crema or a dollop of plain Greek yogurt.
  • Leftover roasted sweet potatoes can be stored in an airtight container in the refrigerator for up to 3 days.
