A refreshing and healthy sweet potato salad perfect for any meal.

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 20-25 minutes, or until tender and slightly caramelized. Let cool completely.
  4. In a large bowl, combine the cooled sweet potatoes, red onion, and cilantro.
  5. In a small bowl, whisk together the remaining olive oil, lime juice, honey, cumin, chili powder, salt, and pepper.
  6. Pour the dressing over the sweet potato mixture and toss gently to combine.
  7. Serve immediately or chill for at least 30 minutes for flavors to meld.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the dressing.
  • This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Consider adding black beans or corn for extra protein and texture.
