- 2 large sweet potatoes, peeled and diced
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1/2 teaspoon cumin
- 1/4 teaspoon chili powder
- Salt and black pepper to taste
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet.
- Roast for 20-25 minutes, or until tender and slightly caramelized. Let cool completely.
