  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes, bell peppers, and onion to the skillet. Cook, stirring occasionally, for 10-15 minutes, or until the sweet potatoes are tender and slightly browned.
  3. Stir in the minced garlic, chili powder, and smoked paprika. Cook for another 1-2 minutes, until fragrant.
  4. Season with salt and black pepper to taste.
  5. Remove from heat and garnish with fresh parsley, if desired.
  6. Serve hot as a side dish or as a base for eggs or other proteins.
