Sweet Potato Casserole with Marshmallows

A classic sweet potato casserole with a fluffy marshmallow topping, perfect for holidays or any family meal.

Ingredients

  • 4 cups cooked, mashed sweet potatoes (about 3 large sweet potatoes)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 3 cups mini marshmallows

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the mashed sweet potatoes, melted butter, sugar, milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined and smooth.
  3. Spread the sweet potato mixture evenly into the prepared baking dish.
  4. Bake for 20 minutes, or until heated through.
  5. Remove from oven and top evenly with mini marshmallows.
  6. Return to oven and bake for an additional 5-10 minutes, or until marshmallows are golden brown and puffed.
  7. Serve warm.

Notes

  • For a smoother casserole, use an electric mixer to mash the sweet potatoes.
  • You can prepare the sweet potato mixture ahead of time and refrigerate. Add marshmallows and bake just before serving.
  • If you prefer a less sweet casserole, reduce the amount of granulated sugar.
