Sweet Potato Bread is a moist, flavorful quick bread featuring mashed sweet potatoes, warm spices, and a touch of sweetness. It’s perfect for breakfast, a snack, or a dessert.

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup mashed cooked sweet potato
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate medium bowl, combine the mashed sweet potato, vegetable oil, eggs, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For best results, use sweet potatoes that have been baked or steamed until very soft.
  • You can add 1/2 cup of chopped nuts (like pecans or walnuts) or raisins to the batter for extra texture and flavor.
  • Store sweet potato bread at room temperature, tightly wrapped, for up to 3 days, or in the refrigerator for up to 1 week.
  • This bread freezes well. Wrap tightly in plastic wrap and then foil for up to 3 months.
