- 2 large sweet potatoes, peeled and cubed
- 1 cup mini marshmallows
- 1/2 cup chopped pecans
- 2 tablespoons butter, melted
- 1 tablespoon brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Preheat oven to 375°F (190°C).
- Place sweet potato cubes in a baking dish.
- Drizzle with melted butter and sprinkle with brown sugar, cinnamon, and salt.
- Toss to coat evenly.
- Bake for 25-30 minutes or until sweet potatoes are tender.
- Remove from oven and top with marshmallows and pecans.
- Return to oven for 5-7 minutes or until marshmallows are golden.
- Serve warm.
Notes
