- 1/2 cup milk
- 1 cup fresh strawberries, hulled and diced
- 1/2 cup unsalted butter, softened (for frosting)
- 3 cups powdered sugar (for frosting)
- 1/4 cup heavy cream (for frosting)
- 1/2 teaspoon alcohol-free vanilla extract (for frosting)
- 1/4 cup fresh strawberries, pureed (for frosting)
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together 1/2 cup softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in 1 teaspoon alcohol-free vanilla extract.
- Gradually add dry ingredients to the wet ingredients, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.
- Gently fold in diced fresh strawberries.
- Divide batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cakes cool in the pans for 10 minutes, then invert onto a wire rack to cool completely.
- For the frosting: In a large bowl, beat 1/2 cup softened butter until creamy.
- Gradually add powdered sugar, beating until smooth.
- Beat in heavy cream and 1/2 teaspoon alcohol-free vanilla extract.
- Stir in strawberry puree until well combined.
- Once cakes are completely cool, frost and decorate with additional fresh strawberries, if desired.
