  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Add split peas, vegetable broth, bay leaves, thyme, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 45-50 minutes, stirring occasionally, until peas are tender.
  6. Remove bay leaves before serving.

Notes

  • For a creamier texture, blend half the soup before serving.
  • Add diced potatoes for extra heartiness.
  • Store leftovers in the fridge for up to 3 days.
