- 2 cups dried green split peas, rinsed
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 2 bay leaves
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.

- Add split peas, vegetable broth, bay leaves, thyme, and black pepper.
