- 1 cup sourdough discard
- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 2–3 tbsp ice water
- 1/2 cup fruit jam or filling of choice
- 1 egg, beaten (for egg wash)
- 1/2 cup powdered sugar (optional, for glaze)
- 1 tbsp milk (optional, for glaze)
- Mix sourdough discard, flour, and salt in a bowl.
- Cut in cold butter until mixture resembles coarse crumbs.
- Add ice water 1 tbsp at a time until dough comes together.
- Divide dough in half, shape into discs, and chill for 30 minutes.
- Roll out each disc into a rectangle and cut into smaller rectangles.
- Place jam on half the rectangles, leaving a border.
- Cover with another rectangle and seal edges with a fork.
- Brush with egg wash and bake at 375°F for 20-25 minutes.
- Cool and optionally glaze with powdered sugar and milk.
Notes
- Use any jam or filling you prefer.
- Chilling the dough ensures flaky layers.
- Store leftovers in an airtight container.
