A moist sourdough coffee cake with a sweet cinnamon crumble topping. Perfect for breakfast or dessert.

  • 1 cup sourdough starter (active)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter (softened)
  • 1 egg
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a large bowl, mix sourdough starter, flour, granulated sugar, butter, egg, milk, and vanilla extract.
  3. Add baking powder, baking soda, and salt. Mix until smooth.
  4. Pour batter into the prepared pan.
  5. In a small bowl, mix brown sugar, cinnamon, and walnuts (if using). Sprinkle evenly over the batter.
  6. Bake for 35-40 minutes or until a toothpick inserted comes out clean.
  7. Let cool before serving.
