A delicious fusion of smashburgers and quesadillas, combining juicy beef, melted cheese, and crispy tortillas for a quick and satisfying meal.

  • 1 lb ground beef (80/20 blend)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 tbsp vegetable oil
  • Optional toppings: diced onions, pickles, ketchup, mustard

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Divide the ground beef into 4 equal portions and season with salt, pepper, garlic powder, and onion powder.
  3. Press each portion into the hot skillet to form thin patties. Cook for 2-3 minutes per side until browned and cooked through.
  4. Remove the patties and set aside. Wipe the skillet clean.
  5. Brush one side of each tortilla lightly with oil. Place one tortilla oil-side down in the skillet.
  6. Sprinkle ½ cup of cheese on the tortilla, add a beef patty, and top with another ½ cup of cheese. Place a second tortilla on top, oil-side up.
  7. Cook for 2-3 minutes per side until the tortilla is golden and the cheese is melted.
  8. Repeat with the remaining ingredients. Slice into wedges and serve with optional toppings.

Notes

  • Use a spatula to press the quesadilla gently while cooking for even browning.
  • Customize with your favorite burger toppings inside or on the side.
  • For extra crispiness, cook the quesadilla in butter instead of oil.
