Slow Cooker Lemon Herb Chicken and Rice

A simple and flavorful dish made with tender chicken, rice, and fresh lemon herb seasoning, cooked together in a slow cooker for an easy meal.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Place chicken breasts at the bottom of the slow cooker.
  2. Add rice, chicken broth, lemon juice, zest, garlic, thyme, rosemary, oregano, salt, and pepper.
  3. Drizzle olive oil over the mixture.
  4. Cover and cook on low for 4-5 hours or until chicken is tender and rice is cooked.
  5. Shred chicken lightly with a fork and mix with rice before serving.

Notes

  • Use fresh herbs if available for better flavor.
  • Adjust seasoning to taste.
  • Stir halfway through cooking if possible.
