Seared Salmon with Lemon Orzo

A simple and flavorful dish featuring seared salmon served over lemon-infused orzo.

Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups chicken or vegetable broth
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. Heat 1 tbsp olive oil in a pan over medium-high heat.
  2. Season salmon with salt and pepper, then sear for 4 minutes per side. Remove from pan.
  3. In the same pan, add remaining olive oil and garlic. Sauté for 1 minute.
  4. Stir in orzo and toast for 2 minutes.
  5. Pour in broth and lemon juice. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Return salmon to the pan, cover, and cook for 3 more minutes.
  7. Garnish with lemon zest and parsley before serving.

Notes

  • Use fresh salmon for best results.
  • Adjust lemon juice to taste.
  • Substitute orzo with rice or quinoa if preferred.
