- 1 pound beef sausage, sliced
- 4 cups potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 2 tablespoons olive oil
- Heat olive oil in a large pot over medium heat.
- Add sausage and cook until browned. Remove and set aside.
- In the same pot, sauté onion and garlic until soft.
- Add potatoes, broth, salt, pepper, and thyme. Bring to a boil.
- Reduce heat and simmer until potatoes are tender (about 15 minutes).
- Stir in cooked sausage and milk. Heat through and serve.
Notes
- Use any type of sausage you prefer.
- For a creamier soup, add a splash of heavy cream.
- Store leftovers in the fridge for up to 3 days.
