A hearty and comforting sausage potato soup made with simple ingredients. Perfect for cold days.

Ingredients

  • 1 pound beef sausage, sliced
  • 4 cups potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sausage and cook until browned. Remove and set aside.
  3. In the same pot, sauté onion and garlic until soft.
  4. Add potatoes, broth, salt, pepper, and thyme. Bring to a boil.
  5. Reduce heat and simmer until potatoes are tender (about 15 minutes).
  6. Stir in cooked sausage and milk. Heat through and serve.

Notes

  • Use any type of sausage you prefer.
  • For a creamier soup, add a splash of heavy cream.
  • Store leftovers in the fridge for up to 3 days.
