- 2 lbs ripe tomatoes, halved
- 1 onion, quartered
- 4 garlic cloves
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup fresh basil leaves
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Preheat oven to 400°F
- Toss tomatoes, onion and garlic with olive oil on baking sheet
- Roast for 40 minutes until caramelized
- Transfer roasted vegetables to blender with basil and broth
- Blend until smooth
- Pour soup into pot and stir in cream
- Simmer for 10 minutes
- Serve hot
