A creamy roasted tomato basil soup made with fresh ingredients.

Ingredients

  • 2 lbs ripe tomatoes, halved
  • 1 onion, quartered
  • 4 garlic cloves
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup fresh basil leaves
  • 4 cups vegetable broth
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 400°F
  2. Toss tomatoes, onion and garlic with olive oil on baking sheet
  3. Roast for 40 minutes until caramelized
  4. Transfer roasted vegetables to blender with basil and broth
  5. Blend until smooth
  6. Pour soup into pot and stir in cream
  7. Simmer for 10 minutes
  8. Serve hot

Notes

  • Use ripe summer tomatoes for best flavor
  • Adjust cream amount for desired thickness
  • Garnish with extra basil leaves
