Queso Fundido with Soy Chorizo is a flavorful, cheesy dip perfect for sharing. It combines melted cheese with savory soy chorizo, creating a delicious appetizer.

  • 1 tablespoon olive oil
  • 1 (12 ounce) package soy chorizo, casings removed
  • 1/2 cup finely chopped yellow onion
  • 1 clove garlic, minced
  • 1 (4 ounce) can diced green chiles, drained
  • 1 (10 ounce) can diced tomatoes with green chiles (like Rotel), drained
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional)
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded Oaxaca cheese (or additional Monterey Jack)
  • Warm tortillas or tortilla chips, for serving

Instructions

  1. Heat olive oil in a medium oven-safe skillet or cast iron pan over medium heat.
  2. Add soy chorizo and cook, breaking it up with a spoon, until browned and crumbled, about 5-7 minutes.
  3. Stir in onion and cook until softened, about 3-4 minutes.
  4. Add garlic and cook for 1 minute more, until fragrant.
  5. Stir in green chiles, diced tomatoes with green chiles, cilantro, cumin, smoked paprika, and cayenne pepper (if using). Cook for 2-3 minutes, allowing flavors to meld.
  6. Remove skillet from heat.
  7. Sprinkle Monterey Jack cheese and Oaxaca cheese evenly over the chorizo mixture.
  8. Place the skillet under a preheated broiler for 3-5 minutes, or until the cheese is melted, bubbly, and lightly browned. Watch carefully to prevent burning.
  9. Garnish with additional fresh cilantro, if desired.
  10. Serve immediately with warm tortillas or tortilla chips.

Notes

  • For a spicier dip, add more cayenne pepper or a pinch of red pepper flakes.
  • You can prepare the chorizo mixture ahead of time and refrigerate it. When ready to serve, reheat and then add the cheese and broil.
  • Leftovers can be reheated in a microwave or on the stovetop, though the cheese may not be as smooth.
