- 2 large sweet potatoes, peeled and diced
- 6 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheese
- 1 tablespoon olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add diced sweet potatoes and cook until tender, about 10 minutes.
- In a bowl, whisk eggs, milk, salt, pepper, garlic powder, and paprika.
- Spread cooked sweet potatoes in a greased baking dish. Pour egg mixture over them.
- Sprinkle shredded cheese on top.
- Bake for 25 minutes or until eggs are set.
- Let cool for 5 minutes before serving.
