A nutritious and filling casserole combining sweet potatoes and eggs for a protein-rich meal.

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced sweet potatoes and cook until tender, about 10 minutes.
  3. In a bowl, whisk eggs, milk, salt, pepper, garlic powder, and paprika.
  4. Spread cooked sweet potatoes in a greased baking dish. Pour egg mixture over them.
  5. Sprinkle shredded cheese on top.
  6. Bake for 25 minutes or until eggs are set.
  7. Let cool for 5 minutes before serving.

Notes

  • You can add cooked bacon or sausage for extra flavor.
