1 pound ground beef (80/20 lean)
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
2 large yellow onions, thinly sliced
1 tablespoon unsalted butter
8 slices rye bread
8 slices Swiss cheese or provolone cheese
Instructions
Season the ground beef with salt and pepper. Form into four equal patties.
Heat olive oil in a large skillet over medium-high heat. Add the beef patties and cook for 3-5 minutes per side, or until desired doneness. Remove patties from skillet and set aside.
In the same skillet, melt butter over medium heat. Add the sliced onions and cook, stirring occasionally, for 15-20 minutes, or until deeply caramelized and tender.
Butter one side of each slice of rye bread. Place four slices of bread, buttered side down, in the skillet.
Top each bread slice with one slice of cheese, a cooked beef patty, a generous amount of caramelized onions, and another slice of cheese.
Place the remaining four slices of rye bread, buttered side up, on top of the sandwiches.
Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly.
Remove from skillet, cut in half, and serve immediately.
Notes
For extra flavor, you can add a pinch of sugar to the onions while caramelizing.
Use a good quality rye bread for the best results.
Any type of melting cheese can be used, such as cheddar or American.
