Ingredients
Scale
2 medium zucchinis
1/4 cup almond flour
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 teaspoon salt
2 tablespoons olive oil
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash and dry the zucchinis. Trim the ends and cut each zucchini into fry-shaped sticks, about 1/4 inch thick.
In a medium bowl, combine almond flour, Parmesan cheese, garlic powder, oregano, black pepper, and salt.
In a separate bowl, drizzle the zucchini sticks with olive oil and toss to coat evenly.
Add the seasoned zucchini sticks to the dry ingredient mixture and toss until all sticks are evenly coated.
Arrange the coated zucchini fries in a single layer on the prepared baking sheet, making sure they do not overlap.
Bake for 15-20 minutes, or until golden brown and crispy. Flip them halfway through baking for even crispiness.
Serve immediately with your favorite dipping sauce.
Notes
For extra crispiness, pat the zucchini dry thoroughly before cutting.
