  • 1 box yellow cake mix
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 4 large eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 1/4 cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • For the frosting:
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine the cake mix, pudding mix, eggs, water, oil, 1/4 cup orange juice, 1 tablespoon orange zest, and 1 teaspoon vanilla extract. Beat with an electric mixer on medium speed for 2 minutes, until smooth.
  3. Pour the batter into the prepared baking pan.
  4. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  5. Let the cake cool completely in the pan on a wire rack.
  6. For the frosting: In a medium bowl, beat the softened cream cheese and butter until light and fluffy.
  7. Gradually add the powdered sugar, beating until smooth.
  8. Stir in 2 tablespoons orange juice, 1 teaspoon orange zest, and 1/2 teaspoon vanilla extract. Beat until the frosting is light and fluffy.
  9. Once the cake is completely cool, spread the orange cream cheese frosting evenly over the top.
  10. Serve and enjoy!

Notes

  • For a stronger orange flavor, use fresh orange juice instead of bottled.
  • You can also add a few drops of orange food coloring to the frosting for a more vibrant color.
