One-Pot Lasagna Soup Recipe

A hearty and easy one-pot lasagna soup with all the flavors of traditional lasagna but quicker to make.

Ingredients

  • 1 lb ground beef
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 lasagna noodles (broken into pieces)
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh basil

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then add broken lasagna noodles.
  5. Simmer for 15 minutes or until noodles are tender.
  6. Serve hot, topped with ricotta, mozzarella, and fresh basil.

Notes

  • Swap beef for ground turkey if preferred.
  • Add spinach for extra greens.
  • Store leftovers in the fridge for up to 3 days.
