- 1 lb ground beef
- 1 small onion (diced)
- 3 cloves garlic (minced)
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 2 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 8 lasagna noodles (broken into pieces)
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp chopped fresh basil
- In a large pot, brown the ground beef over medium heat.
- Add onion and garlic, cook until softened.
- Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then add broken lasagna noodles.
- Simmer for 15 minutes or until noodles are tender.
- Serve hot, topped with ricotta, mozzarella, and fresh basil.
Notes
- Swap beef for ground turkey if preferred.
- Add spinach for extra greens.
- Store leftovers in the fridge for up to 3 days.
