A hearty and creamy vegetable soup made in one pot for easy cleanup and rich flavor.

Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 potatoes, diced
  • 1 cup frozen peas
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Add potatoes and simmer for 15 minutes until tender.
  6. Stir in peas, cream, salt, pepper, and thyme.
  7. Simmer for 5 more minutes.
