One Pot Chicken, Broccoli, and Orzo

A simple and hearty one-pot meal with chicken, broccoli, and orzo pasta.

Ingredients

  • 1 lb boneless, skinless chicken breasts, cubed
  • 2 cups broccoli florets
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups chicken broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried oregano
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until softened, about 3 minutes.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add cubed chicken and cook until browned, about 5 minutes.
  5. Stir in orzo, chicken broth, salt, pepper, and oregano.
  6. Bring to a boil, then reduce heat, cover, and simmer for 8 minutes.
  7. Add broccoli florets and cook for an additional 5 minutes.
  8. Remove from heat and stir in Parmesan cheese if desired.
  9. Serve warm.

Notes

  • Substitute vegetable broth for a vegetarian version.
  • Use fresh or frozen broccoli.
  • Adjust seasoning to taste.
