A creamy, comforting soup with tender chicken and soft gnocchi, inspired by the Olive Garden classic. Easy to make at home with simple ingredients.

  • 2 tbsp olive oil
  • 1 cup diced onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 1 lb boneless skinless chicken breast, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 16 oz potato gnocchi
  • 2 cups fresh spinach, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
  3. Add diced chicken and cook until no longer pink, about 6 minutes.
  4. Pour in chicken broth, heavy cream, and milk. Stir in thyme, parsley, salt, and pepper.
  5. Bring to a simmer and cook for 10 minutes.
  6. Add gnocchi and cook for 3-4 minutes until tender.
  7. Stir in spinach and cook for 1-2 minutes until wilted.
  8. Serve hot.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and stir into the soup.
  • Substitute turkey bacon for beef bacon if desired.
