A hearty and comforting beef stew with tender meat, vegetables, and rich broth.

Ingredients

  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove from the pot.
  3. Add onion and garlic, sauté until softened.
  4. Stir in carrots and potatoes, cook for 5 minutes.
  5. Return beef to the pot, add beef broth, tomato paste, thyme, and rosemary.
  6. Bring to a boil, then reduce heat and simmer for 2 hours until beef is tender.
  7. Season with salt and pepper before serving.

Notes

  • For thicker stew, mix 1 tbsp flour with 2 tbsp water and stir in.
  • Store leftovers in an airtight container for up to 3 days.
