A simple, healthy, and flavorful Mediterranean-style baked fish dish with fresh herbs and vegetables.

Ingredients

  • 4 fish fillets (such as cod, tilapia, or halibut)
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place fish fillets in a baking dish.
  3. Drizzle olive oil over the fish.
  4. Sprinkle minced garlic, oregano, paprika, salt, and pepper on top.
  5. Arrange lemon slices, cherry tomatoes, and olives around the fish.
  6. Bake for 15-20 minutes or until fish flakes easily.
  7. Garnish with fresh parsley before serving.
