Crispy, bite-sized mac and cheese portions, perfect as an appetizer or snack.

  • 2 cups cooked macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 2 large eggs, beaten
  • Vegetable oil for frying

Instructions

  1. Prepare the macaroni according to package directions. Drain and set aside.
  2. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly.
  3. Gradually whisk in the milk until smooth. Cook, stirring constantly, until the sauce thickens.
  4. Stir in the salt, black pepper, garlic powder, and onion powder.
  5. Remove from heat and stir in the shredded cheddar cheese until melted and smooth.
  6. Add the cooked macaroni to the cheese sauce and mix well to combine.
  7. Pour the macaroni and cheese mixture into a shallow dish and spread evenly. Cover and refrigerate for at least 2 hours, or until firm.
  8. In a shallow bowl, combine the breadcrumbs, Parmesan cheese, and parsley.
  9. In another shallow bowl, place the beaten eggs.
  10. Once the mac and cheese mixture is firm, scoop out small portions (about 1 tablespoon each) and roll them into balls or shape them into small patties.
  11. Dip each mac and cheese bite into the beaten egg, then roll in the breadcrumb mixture, ensuring it is fully coated.
  12. Heat vegetable oil in a deep skillet or pot to 350°F (175°C).
  13. Carefully place the mac and cheese bites into the hot oil, frying in batches, until golden brown and crispy, about 2-3 minutes per side.
  14. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
  15. Serve hot with your favorite dipping sauce.

Notes

  • Ensure the mac and cheese mixture is well-chilled before shaping to prevent them from falling apart during frying.
  • Do not overcrowd the fryer; cook in batches for best results.
  • These bites can be baked instead of fried for a lighter option. Bake at 400°F (200°C) for 15-20 minutes, or until golden brown.
