Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 avocado, sliced (for garnish)
  • Fresh cilantro (for garnish)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in onion, garlic, and bell pepper. Cook until softened.
  4. Add diced tomatoes, chicken broth, cumin, chili powder, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Garnish with avocado slices and cilantro before serving.

Notes

  • For extra spice, add a pinch of cayenne pepper.
