  • 4 large potatoes, peeled and diced
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup chopped green onions

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Stir in flour and cook for 1 minute.
  3. Gradually whisk in milk and heavy cream until smooth.
  4. Add potatoes, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes or until potatoes are tender.
  6. Stir in cheese until melted.
  7. Top with bacon and green onions before serving.

Notes

  • For a thicker soup, mash some of the potatoes before adding cheese.
