This loaded hummus platter is a delicious and customizable appetizer, perfect for sharing. It features creamy hummus topped with a vibrant mix of fresh vegetables, olives, and a zesty dressing.

Ingredients

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped tomatoes
  • 1/4 cup pitted Kalamata olives, halved
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon crumbled feta cheese (optional)
  • Pita bread or vegetable sticks for serving

Instructions

  1. In a food processor, combine the rinsed chickpeas, tahini, lemon juice, 2 tablespoons olive oil, minced garlic, cumin, and salt.
  2. Process until smooth, adding the 1/4 cup water a little at a time until the desired consistency is reached.
  3. Spread the hummus onto a serving platter.
  4. Top the hummus with chopped cucumber, chopped tomatoes, and halved Kalamata olives.
  5. Drizzle with additional olive oil.
  6. Garnish with fresh parsley and crumbled feta cheese, if using.
  7. Serve immediately with pita bread or vegetable sticks for dipping.
