6 large croissants
1/2 cup granulated sugar
1/4 cup fresh lemon juice
2 tablespoons unsalted butter, melted
1 teaspoon lemon zest
Pinch of salt
1 cup powdered sugar
2–3 tablespoons fresh lemon juice (for glaze)
Instructions
Preheat oven to 350°F (175°C).
Slice croissants lengthwise without cutting all the way through, creating a pocket.
In a small bowl, whisk together granulated sugar, 1/4 cup lemon juice, melted butter, lemon zest, and salt.
Brush the inside of each croissant with the lemon mixture.
Place croissants on a baking sheet and bake for 8-10 minutes, or until lightly golden and warmed through.
While croissants are baking, prepare the glaze: In a small bowl, whisk together powdered sugar and 2-3 tablespoons of fresh lemon juice until smooth and pourable.
Once croissants are out of the oven, drizzle generously with the lemon glaze.
Serve warm.
Notes
For extra lemon flavor, add more lemon zest to the glaze.
If the glaze is too thick, add more lemon juice a teaspoon at a time until desired consistency.
