Lemon Drizzle Croissants are a delightful pastry combining flaky croissants with a tangy lemon glaze, perfect for breakfast or a sweet treat.

Ingredients

  • 6 large croissants
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon lemon zest
  • Pinch of salt
  • 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Slice croissants lengthwise without cutting all the way through, creating a pocket.
  3. In a small bowl, whisk together granulated sugar, 1/4 cup lemon juice, melted butter, lemon zest, and salt.
  4. Brush the inside of each croissant with the lemon mixture.
  5. Place croissants on a baking sheet and bake for 8-10 minutes, or until lightly golden and warmed through.
  6. While croissants are baking, prepare the glaze: In a small bowl, whisk together powdered sugar and 2-3 tablespoons of fresh lemon juice until smooth and pourable.
  7. Once croissants are out of the oven, drizzle generously with the lemon glaze.
  8. Serve warm.

Notes

  • For extra lemon flavor, add more lemon zest to the glaze.
  • If the glaze is too thick, add more lemon juice a teaspoon at a time until desired consistency.
  • These are best enjoyed the day they are made.
