Transform your leftover roasted turkey into a comforting and flavorful ramen bowl. This recipe uses simple ingredients to create a rich broth and tender turkey, perfect for a quick and satisfying meal.

  • 6 cups turkey broth
  • 2 cups shredded leftover roasted turkey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/2 teaspoon sesame oil
  • 4 ounces ramen noodles
  • 2 soft-boiled eggs, halved
  • 2 green onions, sliced
  • 1/4 cup corn kernels
  • 1/4 cup thinly sliced mushrooms

Instructions

  1. In a large pot, bring the turkey broth to a simmer over medium heat.
  2. Add the shredded turkey, soy sauce, rice vinegar, ginger, garlic, and sesame oil to the broth. Stir to combine and simmer for 5-7 minutes to allow the flavors to meld.
  3. While the broth is simmering, cook the ramen noodles according to package directions. Drain well.
  4. Divide the cooked ramen noodles among serving bowls.
  5. Ladle the hot turkey broth and shredded turkey over the noodles.
  6. Garnish each bowl with soft-boiled egg halves, sliced green onions, corn kernels, and sliced mushrooms.
  7. Serve immediately.
