A comforting lasagna soup with rich flavors of tomato, cheese, and herbs, combining the best elements of lasagna in a warm bowl.

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Add onion and garlic, sauté until softened.
  4. Stir in crushed tomatoes, beef broth, oregano, basil, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add broken lasagna noodles and cook until tender (about 10 minutes).
  7. Serve hot, topped with ricotta, mozzarella, and parsley.

Notes

  • Use gluten-free lasagna noodles if needed.
  • For a thicker soup, simmer uncovered longer.
  • Store leftovers in the fridge for up to 3 days.
