1 pound ground beef (80/20 lean-to-fat ratio recommended)
Place one slice of American cheese on top of each of these 4 patties.
Form 4 more thin patties from the remaining ground beef portions.
Place one of these plain patties on top of each cheese-covered patty.
Pinch and seal the edges of the two patties together to completely enclose the cheese, forming 4 cheese-stuffed burgers. Be sure there are no cracks for the cheese to escape.
Season both sides of each burger with salt and pepper.
Preheat a grill or a large skillet over medium-high heat.
Cook the burgers for 4-6 minutes per side, or until desired doneness. Be careful when flipping to avoid breaking the seal and losing the cheese.
Toast the hamburger buns during the last minute of cooking, if desired.
Serve the Juicy Lucy burgers immediately on buns with your favorite toppings.
Notes
Use a higher fat content ground beef for a juicier burger.
Any type of cheese can be used, but American cheese melts particularly well and stays contained.
Do not press down on the burgers while cooking, as this will squeeze out the juices and cheese.
Be aware that the cheese inside will be very hot when the burger is first cut or bitten into.
